Six quality malts give this smooth, medium to full-bodied ale a deep ruby colour and a rich, dominant, sweet maltiness. There is velvety smoothness in the mouth, whilst the aroma is malty and biscuity, with hints of caramel, coffee and chocolate. Allow to warm to around 6-8ºC and notes of smokiness will come through. The use of the English ‘Fuggles’ hop balances the flavour nicely.
This is a complex beer, and a really enjoyable challenge to brew. As with many things in life, it all comes down to getting the preparation right - in this case the proper milling and proportions of the different malts is vitally important to the quality of the finished product.
We use 6 malts, 5 of which are specialty malts which add specific characteristics to the brew. For example, Crystal malt gives nice caramel, toffee notes, whilst Smoked malt imparts a very delicate smokiness which is noticeable when the Ale is served at 6-8ºC.
With the use of Ale yeast, fermentation takes place at higher temperatures (18ºC) over 5-6 days.

Our Scotch Ale is made with only natural ingredients: hops, 6 malts, water and yeast. It contains no additives.

Brewed as an English Best Bitter style, the combination of five malts gives Sprig & Fern's British Best the ideal balance of malt sweetness. The addition of Crystal and Caramalt provides well rounded toffee and biscuit characteristics.
